Camping Recipe: Cast-Iron Lasagna

Having something easy to make around the campfire is going to make all the difference on your next camping trip. Try this easy cast-iron lasagna and impress your family members with this delicious meal.

Ingredients

  • 2 cups of whole-milk ricotta
  • 1 tsp of Italian seasoning
  • 1 large egg
  • 3/4 cup of grated Parmesan
  • 4 cups of jarred marinara or tomato sauce
  • 9 ounces or 12 no-boil lasagna noodles
  • 1 pound of crumbled Italian sausage
  • Two 8-ounce bags of shredded mozzarella or about 4 cups.

Instructions:

  1. Combine the ricotta, Italian seasoning, egg and 1/2 cup Parmesan in a medium bowl.
  2. Add 1/2 cup of marinara sauce and 1/2 cup water to the bottom of a large Dutch oven with a lid.
  3. Use 3 noodles to fit the bottom of the pan. 
  4. Pour 1 cup sauce over the noodles and spread to cover them completely. 
  5. Add a third of the ricotta mixture on top of the noodles and spread it out until smooth. 
  6. Sprinkle a third of the crumbled sausage on top of the ricotta.
  7. Sprinkle with 1 cup of mozzarella. 
  8. Repeat these steps 2 more times.
  9. Finish with another layer of noodles and the remaining 1/2 cup sauce. 
  10. Top with the remaining 1 cup mozzarella and 1/4 cup Parmesan and cover with the lid.
  11. Prepare coals or a campfire for cooking at medium-high heat.
  12. Arrange the coals so that the dutch oven can sit in the center without touching any coals.
  13.  Place a few coals on the lid of the Dutch oven. 
  14. Cook for about 20 minutes, rotating the dutch oven occasionally. 
  15. Remove the coals from the lid and take the Dutch oven off of the coals.
  16. Let sit, covered, for 15 minutes
  17. Serve and enjoy.
